I have just done the following service on my Pajero and want to keep up a regular service interval now I have a proper starting point:

Engine Oil
Gearbox Oil (it's a manual transmission not auto)
Transfer Box Oil
Front Diff Oil
Rear Diff Oil
Oil Filter
Fuel Filter
Air Filter
Greased Nipples

I do between 12000-13000 miles per year but have been unable to find any good information on correct service intervals for vehicles of this age by searching on here and google.

This is what I follow for my 96 2.8L except mine is AT.  AT fluid change is 30K.  MT fluid change is 40K.  I downloaded this mitsu dealership checklist by Samcor on the web.  It seems to consistent with the owners manual.

engine oil 6 months or 5,000km
engine oil filter  6 months or 5,000km (I do mine every other change)
fuel filter 20,000km
grease points 30,000km
brake fluid 2 years or 30,000km
power steering fluid 40,000km
front differential 40,000km
transfer case 40,000km
rear differential 40,000km
cooling system 2 years or 60,000km

manual transmission  40,000km

That looks applicable to the Mk1 as well, though I pump all 18 grease nipples at every oil change.

Inspect the brake pads too, and have a good look over the chassis, tyres and such.

Spray lube on the door hinges.
